ST. EUSTATIUS--Para Mira restaurant at Paramiraweg, right behind Paper Corner, has come under new ownership. New proprietor Ashley Coenraad has taken over the restaurant from the Old Gin House. The restaurant opened its doors under its new owner on Wednesday.
Coenraad stated that the business will use the same concept as before but said she will be incorporating ideas to keep it young and new. The restaurant will also be adding some new dishes to the menu.
The idea of a breakfast and lunchroom and a pastry area is still going to be there, she explained. Her other business Ashley Sweet House specializes in pastries.
Coenraad was born in the Netherlands. She came to St. Eustatius a few years ago, fell in love with the island and decided to make it her home. She started working at Para Mira restaurant since its inception and now is its proud owner.
Director of St. Eustatius Tourism Development Foundation Charles Lindo extended his congratulations to Coenraad with her “momentous” decision to branch out on her own and “take a chance” in Statia’s business world. He thanked her for contributing to the island’s tourism.
Para Mira restaurant will be open Monday through Saturday, 8:00am to 3:00pm. She said that they are in the final stages of deciding on which day to have themed night-time dining and happy hour.
