Fancy Mother’s Day Brunch!

*Adult supervision required – let an adult handle the kitchen equipment and knives.

Attention, junior chefs and bakers! This coming Sunday is Mother’s Day! How about treating Mom to a fancy brunch at home? Here are a few fun recipes for a complete Mother’s Day brunch.

Mom works hard all year round, and this is a nice way to show her your appreciation. This menu includes something hot and sweet, something classic, something new, and something fresh!

Note: The Horchata should be prepped on Saturday, and the egg salad and muffins can also be made the day before, if you prefer.

 

Banana Chocolate Muffins

Everyone will love these sweet treats. If you make them the day before, just pop them into the microwave for 10 seconds before serving. Recipe: The Baking ChocolaTess/Kim Lange.

Makes 12 muffins

You’ll need

4 ripe bananas, peeled

1/3 cup melted butter, cooled

2/3 cup sugar

1 egg

1 teaspoon vanilla

1 teaspoon baking soda

A pinch of salt

1½ cups all-purpose flour

1 cup semisweet chocolate chips

Instructions

-Preheat oven to 350 °F (177 °C).

-Grease the muffin tins.

-In a big bowl, mash the bananas and melted butter with a fork until smooth.

-Add sugar, egg and vanilla and mix just until combined.

-In another bowl, combine the other dry ingredients: flour, salt and baking soda.

-Add the chocolate chips and mix in so that they are coated.

-Add the dry contents to the banana mixture and mix until well combined. Do not overmix.

-Divide the batter into the muffin tins and bake for 20 minutes.

 

Egg Salad Sandwiches

A classic!

You’ll need

Eggs: two per person

Mayonnaise

Mustard

Salt and black pepper, to taste

Sliced bread

Instructions

-Have an adult carefully add the eggs to a large pot with boiling water. Add a bit of salt to the water.

-Boil eggs for 10 minutes. Then, have an adult drain the water and add ice to the eggs.

-Peel the eggs once they’re cooled, and divide the whites and yolks into separate bowls.

-Add mayonnaise to the yolks, and mash them together – it should be just enough mayo to make the mixture creamy.

-Add a little mustard, and combine – it’s better to add just a little, and then make it stronger, rather than making it too strong.

-Add a pinch of salt and pepper to taste.

-Have an adult cut the egg whites into small pieces, and add it all back into the yolk-mixture and then combine, being careful not to squash the egg whites.

-Before serving, spread the egg salad onto Mom’s favourite sliced bread.

Refreshing Drink: Horchata

Something different: a refreshing drink from Spain/Mexico. There are a few different variations of it, and it’s typically enjoyed in hot weather.

You’ll need

1 cup uncooked white long-grain rice

5 cups water

½ cup milk

½ tablespoon vanilla extract

2 cinnamon sticks, or ½ tablespoon ground cinnamon

2/3 cup white sugar

Instructions

-Pour the rice and water into a blender. Blend about 1 minute, until rice begins to break up.

-Pour into a mixing bowl. Add the two cinnamon sticks and let stand in the fridge overnight.

-If you’re shorter on time, let the mixture stand at room temperature for three hours.

-Using a colander or cheese-cloth, strain the drink into a pitcher. Then stir in the milk, vanilla and sugar. If using ground cinnamon rather than the cinnamon sticks, add it at this stage.

-Keep in the fridge until you’re ready for brunch. Serve over ice.

 

Fruit & Dip

This one’s very flexible. It can be done with just apples, or any combination of Mom’s favourite fruit. Grapes, pineapple, strawberry and bananas are all good options.

You’ll need

Your favourite fruit (around 2 portions per person)

Greek yogurt

1 teaspoon honey, or ½ teaspoon sugar

Optional: a dash of cinnamon or vanilla extract

Instructions

-Combine the yogurt and sweetener of choice in a small bowl.

Tip: You can also use store-bought flavoured yogurt instead of making your own dip.

-Simply cut the fruit into bite-sized pieces, and serve alongside the dip.
