Norwegian Pancakes (Pannekaken)
In Norway, when people have eaten their main meal at midday, they will have a light supper in the evening known as Kveldsmat. A popular supper food is Norwegian Pancakes. They are a thin pancake served with various berries, jams or simply just a sprinkle of sugar and a dab of butter. They are popular in Sweden and Finland too – it is traditional to eat them on a Thursday evening after a bowl of pea and ham soup. Norwegian Pancakes are something you can have fun learning to make with Mom and Dad, and they are delicious. The recipe makes 6 pancakes.
Ingredients:
3 eggs
1½ cups milk
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon sugar
A pinch of cardamom (optional)
To serve: butter and your favourite jam or berries
Method:
Whisk the eggs and milk in a large bowl.
Add the flour, salt and sugar, and beat with your whisk until smooth.
Spray a medium-sized non-stick skillet with cooking spray.
Heat over medium-high heat.
Pour a thin layer of batter (about 1/4 cup) into the skillet, and tilt the pan to coat the bottom.
Cook until the top looks dry and starts to bubble - about 30 seconds.
Carefully slide a spatula under the pancake and flip it over.
Cook for a few seconds on the other side, just until browned.
Remove to a plate, and repeat with remaining batter. (You may need to add more cooking spray)
Spread butter and jam (or berries) on your pancake and roll up to serve.
