Bamboo House takes iconic brand to new heights

From Bamboo’s early days next to the old Bliss, to its well-loved location in Maho, to the Bamboo Bar in Cole Bay, to its current location on Diamond Hill, Bamboo has become an iconic brand on St. Maarten. The restaurant basically introduced sushi to the island and has been redefining elegant dining and bringing global food trends to our shores ever since.

Stay tuned, because Bamboo has exciting projects that include lunch, brunch, a live sushi bar and a vintage rum and cigar bar underway.

The restaurant’s newest location offers the same elegant ambiance, excellent service and exquisite food and drink we are used to, but with the addition of the breath-taking panoramic views of Cole Bay, Simpson Bay, airport, Maho and Marigot and the rich history that the monumental Fleming House has to offer

Bamboo House is already open from 5:00pm seven nights a week for sunset drinks and dinner. But as of October 1, sushi lovers will also be able to have lunch in Bamboo House’s air-conditioned dining area or on the restaurant’s sunny terrace, as Bamboo House will also be open daily for lunch.

This week, Bamboo House will be opening its new live sushi bar in the main dining area. This will give guests the opportunity to enjoy their meal while watching the world-class chefs work their magic preparing the award-winning sushi – and Bamboo’s new menu showcases some of that magic.

Besides Bamboo’s well-loved classics, such as the original angry dragon, amazing tuna and sexy salmon roll, the restaurant also offers new favourites, such as the double salmon roll made with real wasabi (not the usual cheap green stuff) and features modern sushi or sashimi presentation with ice and smoke.

Though Bamboo is staying true to their sushi roots, the restaurant’s excellent hot dishes are gaining popularity – and not without reason. Bamboo’s grilled filet mignon is said to be one of the best on the island and its beef short ribs braised for 18 hours in an orange ponzu broth continues to impress diners.

Starting in November, Bamboo will also be offering a bottomless brunch complete with its Asian-style tapas and craft cocktails. And while the location looks amazing already, Bamboo is still in the process of restoring the monument and bringing it to new heights. For example, Bamboo will soon be opening the Fleming rum room with vintage rums and cigars.

Bamboo House is located in the historic Fleming House on Diamond Hill in Cole Bay across the street from Carrefour Supermarket. Bamboo offers Valet Service for $5 or free self-park down the hill at Carrefour where you can meet the Bamboo Shuttle.
