Tuna Cakes

*Adult supervision required

These tuna cakes are easy and delicious. You can have them on their own, with some dipping sauce, as a side dish, or even in a sandwich. This recipe contains raw egg, so don’t lick your fingers, and wash your hands properly! Let an adult handle the chopping and the stove-top.

You’ll need

* 3 eggs

* 1 tsp lemon juice

* 3 tbsp grated Parmesan cheese

* ¾ cup Italian-seasoned bread crumbs

* 1 tsp old bay seasoning

* 4 five-ounce cans of tuna, drained

* 1 tsp Dijon mustard

* 1/8 cup finely diced onion

* ¼ cup finely diced celery

* ¼ tsp black pepper

* ¼ tsp dill

* 3-4 tbsp vegetable oil

Instructions

Beat eggs and lemon juice in a bowl. In a separate bowl, combine Parmesan cheese, bread crumbs, old bay seasoning, tuna, mustard, onion, celery, black pepper and dill. Pour in egg/lemon mixture.

Separate the mixture into eight parts, and form each into patties with the palms of your hand. They should be about one-inch thick.

Pop them into the fridge for an hour (or longer). This helps them to keep their shape when you cook them.

Add the vegetable oil to a pan and cook the patties over medium heat until golden brown. This should take about five minutes for each side.
